Unlike other Kashmiri dishes, this cuisine is traditionally prepared without onions, garlic, or ginger, creating a distinctive flavor profile rich in aromatic spices like Kashmiri red chili, fennel, cinnamon, cardamom, cloves, and saffron. Fresh vegetables feature prominently in the thali, with favorites such as haak (leafy greens), nadru (lotus stem), muji (radish), and wangun (eggplant).
