Curated by renowned Chef Gitika Saikia, the experience brings together rustic regional cooking, indigenous ingredients, and time-honoured techniques in a contemporary, festive setting.
Guests are invited on a cultural and culinary journey where authentic Northeast Indian recipes are presented alongside Seasonal Tastes’ signature lavish global buffet. Each dish reflects stories, traditions, and flavours rooted in the region, thoughtfully adapted for a refined yet approachable dining experience.
Adding to the atmosphere are live cooking stations and interactive moments with the chef, allowing guests to witness traditional techniques up close. Chef Gitika Saika is known as one of the pioneers in the concept of home-dining, she introduced the concept of integrating fermented ingredients such as Bamboo shoot, Axone (Akhuni), Smoked meats, Haaj (fermented rice wine) and several other ingredients to present a medley of tribal and urban cuisine to her guests.
