When we caught up with AK Solanky, the co-founder and chef behind Ta.Ma.Sha, his passion was palpable. “We have been in hospitality a long time,” he begins, seated comfortably as if chatting with an old friend. “We wanted to do something that wasn’t already there in the F&B space. In Hyderabad, there’s no Asian vegetarian restaurant. So, we took that space and made it our own.”



The space is somewhere between a casual café and a global kitchen. “We call it a coffee shop,” he says, smiling. “Not a formal place — we wanted to invite people in, make them feel relaxed.” Yet, the menu reads like that of a full-fledged international bistro, offering Korean, Thai, Indo-Chinese, and even Continental and Italian dishes — all purely vegetarian.

“We even have cornflakes!” he chuckles, “and some Mexican options too — pizzas, burgers, quesadillas. Plus, because it’s a coffee shop, there’s a great range of desserts and beverages.”



But what really sets Ta.Ma.Sha apart? “The space we occupy,” he says plainly. “It’s unique. A vegetarian Asian restaurant — there’s none like that.”

For Everyone Including Jain Foodies

AK’s deep commitment to inclusivity shows in every corner of the menu. “People who follow Jain diets have so many restrictions. And in Asian cuisine, it’s tough to avoid garlic and onion. So we created recipes specifically for them.”

The result? A dedicated Jain Asian menu with surprising delights like Jain Pizza and Jain Korean Ramen. “If you are Jain, you usually have to explain a lot at restaurants — don’t put this, don’t add that. Here, you just say, ‘Jain food,’ and we have got you covered.”



Chef’s Picks: A Must-Try

When asked what dishes first-timers absolutely must try, AK doesn’t miss a beat. “Paneer Katsu — that’s our signature. Katsu is originally made with non-veg sauce, but we created a veg version. We serve it with paneer. Very special.” The other? “Korean Kimchi Ramen. It’s a hearty bowl — full of flavor, full of soul.”

The Man Behind the Menu

AK Solanky isn’t just the co-founder — he’s also the chef. With over 15 years of culinary experience spanning Dubai, Canada, and Thailand, he brings a deep, authentic understanding of Asian flavors.

“In Thailand, they eat everything,” he says, laughing. But I turned vegetarian, and I realized — there’s so much to explore in veg cuisine. In non-veg, you are working with six, seven options. But in veg? It’s like a periodic table — 30 ingredients to play with.”

His culinary journey, combined with his personal shift to vegetarianism, shaped the philosophy behind Ta.Ma.Sha “We saw a gap in the market and decided to own that space.”

What’s in a Name?

Ever wondered what Ta.Ma.Sha really means? “It has two meanings,” AK explains. “In Hindi, ‘tamasha’ means a spectacle — it can be good, bad, fun. Something you can’t forget.” But the layered meaning goes deeper. “We broke it into three parts: ‘ma’ for mother, ‘sha’ for power — like in Shaolin — and ‘ta’ for woman in Mandarin.”

He adds, “So, it’s a tribute to the woman, the mother, the power. We love sharing the story behind it.”

The new Gunrock outlet, launching next weekend, promises more than just great food. “We are adding pickle ball ports, and bringing in more healthy options — kombucha, for example. It’s not just about eating, it’s about lifestyle,” AK shares.
