Usman Bhai ki Fish Fry is a must-try, showcasing the chef’s skill in preparing delicate fish. Meve Mawe Ke Seekh makes you want to forget Delhi’s signature Dahi kebabs. Hilal Bhai ki Mutton Nihari stands out with its rich and flavorful gravy, while the paneer gravy is notable for its soft and juicy texture. Here are some of the must trys.

Chef Anuj Wadhawan, Consultant Chef for the festival, shares, “We have recreated the traditional recipes of Old Delhi, and Mohabbat Ka Sharbat is one of them. It’s a refreshing drink that’s sure to quench your thirst.”

Natraj Dahi Bhalla: A Classic Street Food



Who can resist the charm of crispy bhallas dipped in creamy yogurt and topped with spices? Mr. Neeraj Roy, General Manager, Tansen, says, “Every detail—be it the music, the ambience, the aroma, or the plating—has been thoughtfully curated to reflect the old-world charm of Delhi’s culinary havens.”

Laung Churey Kebab: Aromatic and Flavorful

These succulent kebabs are infused with the warmth of laung (cloves) and churey (a type of spice blend). Chef Anuj explains, “We have used traditional spices and ingredients to recreate the authentic flavors of Old Delhi’s kebabs. While Dilli-6 is inspired by the famous street food varieties in old Delhi, we have innovated the recipes to elevate the taste”

This popular street food dish has won hearts across India. Chef Anuj shares, “Aslam Butter Chicken is a classic Delhi dish. We have perfected the recipe to bring out the rich flavours and tender chicken.” My food companion said, the taste was on a new level altogether.

Achari Biryani: A Flavorful Twist

This biryani is a masterclass in flavors, with the tanginess of achari (pickle) spices adding a unique twist. In the words of Chef Anuj, It is a modern twist to the traditional biryani recipe, incorporating achari flavors and spices to create a truly unforgettable dish.
