Heat some oil in a wok or wide saucepan. 2. Add chopped garlic, chopped ginger and chopped green capsicum to the heated oil and sauté well for 2 minutes. 3. Then add finely chopped vegetables (green beans, carrot, cabbage and spring onion whites) and sauté for a few minutes. 4. Sprinkle some salt and pepper powder as per your taste to season it. Mix well. 5. Now add soy sauce, vinegar, tomato ketchup, and schezwan sauce to the vegetables. Keep stirring the vegetables as you add each ingredient so it gets mixed well. 6. Move the vegetables towards the sides of the wok or wide sauce pan. In the space created in the center, add some oil and crack open the eggs. 7. Quickly scramble the eggs and mix it along with the sautéed vegetables. Add chopped spring onion stalk and mix well. 8. Now add the cooked basmati rice to the vegetables and stir gently until the vegetables and rice get mixed well. 9. Schezwan Egg Fried Rice is ready to serve hot. Note: For a Schezwan Veg Fried Rice, you can simply add the cooked basmati rice to the vegetables and leave out the eggs. Prawn Fried Rice Ingredients Basmati Rice - 200 gms Egg - 3 nos Salt to taste Pepper Prawn - 200 gms Sesame oil - 2 Tsp Chopped Ginger Chopped Garlic Spring Onion - 1 bunch Light Soy sauce - 2 Tbsp Fish sauce - 1 Tbsp (optional) Sriracha chilli sauce - 2 Tbsp Thai Sweet chilli sauce -1 Tbsp Pepper powder - 1/2 Tsp Method 1. Pour the eggs to make an omelette 6. Take out the omelette when it is cooked and keep it aside 7. In the same pan, heat some oil 8. De-vein the prawns and add to the pan 9. Add some salt and pepper to the prawns 10. Take out the prawns after they have turned pink and keep it aside 11. In a wok, add some oil and heat it 12. Add some finely chopped ginger, garlic, spring onions and the greens of the spring onions 13. Add some light soy sauce, fish sauce, sriracha chilli sauce, Thai sweet chilli sauce and some pepper 14. Give the mixture a quick stir 15. Now start adding the cooked rice to the mixture 16. Cut the omelette into small pieces and add it to the rice 17. Now add the cooked prawns to the fried rice and mix it till everything combines evenly 18. Use some spring onion greens for garnishing and serve it hot. Spicy Paneer Fried Rice Ingredients Oil - 3 tsp Chopped Ginger Chopped Garlic Onion - 1 no. chopped Capsicum - 1/2 no. chopped Green chili - 1 no. chopped Grated Carrot Spring onion Salt to taste Pepper powder - 1 tsp Garam masala powder - 1/2 tsp Chili powder - 1/3 tsp Spring onion stalk Cooked Basmati Rice Garnish it with Spring onion stalk & Coriander leaves For Toasting Paneer Paneer - 200gms Salt to taste Chili powder - 1 tsp Pepper powder - 1/2 tsp Cumin powder - 1 tsp Coriander powder - 1 tsp Oil - 2 to 3 tsp Method: 1. Take a bowl add paneer, salt, chili powder, pepper powder, cumin powder and coriander powder. Mix it all together and marinate for 10 minutes. 2. Heat a pan add oil and toast the marinated paneer. Keep it aside. 3. In the same pan, add oil, ginger, garlic, onion, capsicum, green chili and saute well. 4. Once the onion turns transparent, add carrot, spring onion, salt, pepper powder, garam masala powder, chili powder, spring onion stalk and saute all the ingredients together. 5. Add cooked basmati rice or ( you can use left over rice) and gently mix it. 6. Finally add paneer to the rice. 7. Garnish it with spring onion greens and fresh coriander leaves. Delicious spicy paneer fried rice is ready to serve. Schezwan Egg Fried Rice
Ingredients

Oil
Chopped Garlic - 1 Tsp
Chopped Ginger - 1 Tsp
Few Chopped Green Capsicum

Cooked Basmati Rice

Method:
1. Heat some oil in a wok or wide saucepan.

Prawn Fried Rice
Ingredients

Basmati Rice - 200 gms
Egg - 3 nos
Salt to taste
Pepper
Prawn - 200 gms
Sesame oil - 2 Tsp
Chopped Ginger
Chopped Garlic
Spring Onion - 1 bunch
Light Soy sauce - 2 Tbsp
Fish sauce - 1 Tbsp (optional)
Sriracha chilli sauce - 2 Tbsp
Thai Sweet chilli sauce -1 Tbsp
Pepper powder - 1/2 Tsp

Method
1. Boil the basmati rice and keep it aside
2. Add some salt to the rice while it boils

Salt to taste
Pepper powder - 1 tsp
Garam masala powder - 1/2 tsp
Chili powder - 1/3 tsp
Spring onion stalk
Cooked Basmati Rice
Garnish it with Spring onion stalk & Coriander leaves

For Toasting Paneer
Paneer - 200gms
Salt to taste
Chili powder - 1 tsp
Pepper powder - 1/2 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Oil - 2 to 3 tsp

Method:
1. Take a bowl add paneer, salt, chili powder, pepper powder, cumin powder and coriander powder. Mix it all together and marinate for 10 minutes.
