Take a Chill Pill With Functional Ice Cubes
You don’t need an iceberg to make a cool statement; just ‘break the ice’ at the party with functional cubes, either infused or on the rocks and say cheers!

Freeze the day folks, because ice is getting a major makeover. No longer just frozen water, functional ice is infused with ingredients – flavour-packed boosters that energise, tint, and scent.
Each cube transforms a drink into a vibrant canvas. From digestion-friendly blends to floral infusions and spicy bursts, these colourful blocks merge health with aesthetics.
Sip Sip Hurray!
Functional ice is becoming a category of its own. “An ice menu showcasing shapes and infusions, and melt profiles can elevate a mocktail or spirit serve. Ice shifts from background to ingredient, adding functionality and depth while enhancing the overall drink-ing experience,” says Rajeev Chauhan, Mixologist, Verre Vivanta Goa Miramar.
Ice = Star Ingredient
Mocktails get their edge from ice that’s both functional and frame-worthy. Social media leads the change, and due to wellness awareness, mocktails are elevated. “Instagrammable” creations set the benchmark, lifting guest perception and driving orders. Artificial syrups are replaced with real fruit infusions, reducing sugar and aligning with clean, natural, low-calorie drinking,” states Jigyanshu Pandey, Bar Captain, Taj City Centre, Gurugram.
Regional ingredients anchor functional ice in India’s culinary heritage. “Each sip gains new layers of complexity, turning hydration into an evolving experience. Tulsi adds herbal lift, kokum lends ruby tartness, rose releases floral elegance, and jamun deepens with purple fruit. Each melt layer's flavour, colour, and aroma is never diluted, making every sip premium,” says Najmir.
Frozen Florals & Fruits
Blooms, herbs, and fruits in ice elevate flavour and presentation. “Pansies, blue peas, violas, nasturtiums and calendula add colour; lavender and chamomile bring aroma. Mint, basil, rosemary, and lemon release fragrance when bruised. Thin slices of cucumber, citrus, berries, and kiwi freeze cleanly. Crystal-clear cubes come from boiled water and two-stage freezing. Herbal teas, juices, or syrups add depth, infusing flavour as the ice melts,” states Rajeev. Fruit-infused ice cubes upgrade mocktails. ‘Unlike regular ice that dilutes, these cubes release flavour as they melt, layering taste and evolving the drink. Grapefruit, mango, green apple, and strawberry add bright, refreshing dimensions,” says Pandey.
Cool Cube Vibes
Coloured cubes (saffron beetroot) add visual magic with natural hues that shift in the glass. “Functional cubes infused with fruits and herbs act like flavour capsules, releasing fresh aromas and complexity as they melt. Large, clear spheres and king cubes deliver slow-melt efficiency, preserving texture, acidity, and sparkle while signalling luxury,” says Najmir.
Spice-infused ice finds harmony in sweet or sharp bases. “Chilli cubes mellow in mango, pineapple, or citrus, their heat softened as they melt. Ginger cubes blend with honey, apple, or pear, releasing warmth wrapped in sweetness. Each slow infusion layer's flavour adds depth without overpowering,” adds Najmir.
Just Chill Folks
Functional cubes are frozen infusions of fruit purees, seeds, herbs, or coconut water. They don’t just chill a drink; they cool the body, add colour, flavour, and nutrients. They are wellness boosters disguised as ice. More than hydration, they can also act as a beauty and skin-hydration tool,” says Aman Puri, Founder, Steadfast Nutrition, a wellness nutrition brand.
Frozen fruit, seed, herb, or coconut-water cubes deliver antioxidants, electrolytes, probiotics, and plant compounds. “Ginger, turmeric, lemon, and honey boost immunity; green tea, hibiscus, blue pea, and aloe vera aid metabolism. Amla, mint, and cucumber refresh skin with vitamins and antioxidants. But remember: the nutrient dose is small, and they’re no substitute for fresh fruits and vegetables,” says Puri.
ICE ICE BABY I Here are a few Mocktail recipes made vibrant by functional ice

• Water – 500 ml
• 8 Edible rose petals
• A few drops of rose water
Method
1. Add 2 rose petals to the water.
2. Drop rose water into each mould. Freeze solid.
Mocktail
Ingredients
• Apple juice – 90 ml
• Artisanal rose shrub – 20 ml
• Fresh lime juice – 10 ml
• Sparkling water – 60 ml
• 2 Rose-infused ice cubes
• Garnish: Green apple ball & rose petal
Method
1. Place rose-infused ice in a chilled highball glass.
2. Add apple juice, rose shrub, and lime juice, then stir for 10 seconds until frosted.
3. Top with sparkling water and finish with an apple ball and rose petals.

• Water – 250 ml
• Dried butterfly pea flowers – 8–10 (or 2 tea bags)
Method
1. Steep flowers in hot water until blue.
2. Strain, cool and freeze into cubes.
Citrus Mocktail
Ingredients
• Orange juice – 45 ml
• Lime juice – 20 ml
• honey syrup 20 ml
• Yuzu juice – 15 ml
• Sparkling water – 60 ml
• Tonic water – 40 ml
• Butterfly pea, one ice cube
Method
1. Place a butterfly pea cube in a chilled rocks glass.
2. Shake orange, lime, yuzu juice and honey with ice.
3. Strain over the cube, top with sparkling water and tonic.
4. The drink begins golden, then as butterfly pea tea disperses — acidity transforms its hue from blue to violet to deep purple.

Ingredients
• Mango pulp – one spoon
• Ginger juice, half tsp
• Water
• Freeze the mango pulp and ginger juice in a mould with water till solid.
For the mocktail:
• Mango juice – 120 ml
• Apple juice – 60 ml
• Passion fruit crush – 10 ml
• Ginger ale – to top
• Infused ice cube – 1 large cube
Method
1. Shake mango juice, apple juice, and passion fruit crush with ice until chilled.
2. Strain into a glass, top with ginger ale, drop in the infused ice cube, and serve.
