There’s something incredibly satisfying about turning Britannia Bourbon biscuits into something special. In this easy, no-bake rocky road, Pooja Dhingra transforms the classic biscuit into a rich, indulgent dessert layered with melted chocolate, marshmallows, and nuts. It’s fuss-free, comforting, and comes together in no time—no oven needed.
Ingredients:
1. Britannia Bourbon biscuits – 200g (100g roughly chopped, 100g crushed into fine crumbs)
2. Milk chocolate – 150g
3. Dark chocolate – 150g
4. Unsalted butter – 75g
5. Golden syrup (honey) – 2 tbsp
6. Mini marshmallows – 50g
7. Pecans (or any nuts of choice) – 50g, roughly chopped
Steps:
1. Line an 8-inch square baking tin with parchment paper and set aside.
2. Roughly chop 100g of Bourbon biscuits.
3. Crush the remaining 100g into fine crumbs using a rolling pin or food processor.
4. In a heatproof bowl over simmering water, melt milk chocolate, dark chocolate, butter, and golden syrup together. Stir occasionally until smooth
5. Add the biscuit crumbs, chopped biscuits, marshmallows, and pecans to the melted chocolate mixture.
6. Mix well until everything is evenly coated.
7. Spoon the mixture into the lined tin and press down gently.
8. Refrigerate for at least 2 hours, or until completely firm.
9. Once set, cut into squares and serve chilled.
10. Store in the refrigerator for up to a week
