The olive squigglies
Ingredients
500 gm of spaghetti pasta
(I use a 500 gm pack of De Cecco pasta available in any gourmet supermarket),
5-6 cloves of finely minced garlic,
3-4 tbsp olive oil,
2 tsp chilli flakes
A few tsp oregano (optional)
A cup of grated parmesan cheese
A cup of small deep fried bread cubes (optional)
Finely chopped parsley
Rock salt
METHOD
Bring water and rock salt to a boil, add required amount of spaghetti. Cook it until al dente. Drain excess water and keep aside.
Meanwhile, heat a few tbsp of olive oil in a pan and add the minced garlic and cook until golden brown. Now, add the chilli flakes to it.
Add boiled pasta and sauté till it is aromatic and toss the spaghetti well. Once mixed, keep on low flame and grate a generous amount of parmesan cheese. And lastly, sprinkle freshly chopped parsley and serve pasta hot.
I add some deep fried bread cubes or minced chicken just to make it crunchy. You can add either of these ingredients while you’re mixing the pasta.
While serving, you can sprinkle some oregano on the pasta for more flavour and grate cheese and dig in!
The recipe takes less than 30 minutes, and it’s a classic dish to go with some red wine.
