Chicken ghee roast: Red, tangy and roasted

The mouth-watering flavours of this dish is achieved using the Fiery red, tangy and roasted spices. The combination with ghee brings down the spiciness of chillies while highlighting its underlying sour notes which makes a hot seller among all our dishes served at Feliz.

Ingredients:

100gm byadgi chilli

6gm garlic

10gm tamarind

20gm ghee

2gm turmeric

2gm jeera seed

350gm chicken pieces

Step 1

Make a paste of all the dry ingredients together in a mixer.

Step 2

Sauté the above paste with ghee in a saucepan.

Step 3

Fry the raw chicken pieces into a saucepan with ghee for at least 3 minutes.

Step 4

Cook the fried chicken pieces with the ghee roast mixture for 15 minutes.

Step 5

Season the chicken ghee roast with salt and sugar as per requirement.

Step 6

Serve hot along with Mangalorean pan-fried bread, such as neer dosa or appam.
