Ingredients in gms:

Mexican tomato paprika rice

  • Boiled Basmati Rice: 200
  • Tomato Sauce: 50
  • Boiled Rajma: 10
  • Salt: 1
  • Pepper: 1
  • Veg Stock: 100
  • Chopped Tomato: 5
  • Chopped Coriander: 1
  • Paprika Powder: 1
  • Chopped Jalapenos: 1
  • Roasted Cumin Powder: 1
  •  
  • Refried beans
  • Boiled Rajma: 30
  • Chopped Garlic: 3
  • Chopped Onion: 10
  • Chopped Tomato: 10
  • Chopped Coriander: 1
  • Chopped Jalapenos: 1
  • Paprika Powder: 1
  • Cumin Powde: 1
  • Oregano: 1
  • Salt: 1
  • Pepper: 1
  • Oil: 1
  • Sautéed Broccoli: 30
  • Broccoli Florets: 30
  • Minced Garlic: 2
  • Pepper: 1

Habanero grilled paneer

  • Paneer Steak: 120
  • Habanero Seasoning: 10
  • Chilli Powder: 1
  • Minced Jalapenos: 1
  • Minced Garlic: 1
  • Salt: 1
  • Pepper: 1

Oil: 10

 

Roasted corn salsa

  • Roasted Sweet Corn: 30
  • Chopped Onion: 5
  • Salt: 1
  • Pepper: 1
  • Chopped Jalapenos: 1
  • Chopped Coriander: 1
  • Lemon Juice : 1
  • Tomato Paprika Sauce: according to taste

 

Preparation Method:

Marinate cottage cheese in spices. Take thin cottage cheese slices. Add salt, pepper, jalapeno, minced garlic, and Habanero spice mix. Grill it on a griller. Cut into 1.5 gm triangles.  

Boil rajma in cooker till soft but do not mash it. Drain but preserve water. In a heavy bottom pan, heat oil and fry garlic and onions till brown.

Add tomatoes, spices and fry them.

Add beans and half the water. Continue to cook till water is absorbed. Add remaining water and cook in a low flame till beans are partly mashed, check seasoning.

Toss the boiled rice along with prepared bean tomato gravy, veg stock, paprika powder, cumin powder and tomato sauce.

Tossed rice is topped with grilled cottage cheese.

 

Serving Suggestion:  Goes well with Roasted Corn Salsa.
