Reader's recipe: Suji-licious

Sandalwood actress Radhika Chetan shares her favourite recipe, a sugarless dessert.

Diet-friendly suji baath with jaggery
Ingredients
1 cup semolina (suji), 1/2 cup pure ghee
1 1/2 cup jaggery, 2-1/2 cup water, a small bowl of dry fruits — almonds, walnuts, dry grapes and elaichi powder.

Procedure:
Take a large-based frying pan and begin by roasting the suji (as per prescribed quantities) in pure ghee. Ideally, this should be done for about five minutes on a low flame or best, until the suji is golden brown. Keep it aside.

Add about three dollops of ghee and throw in a handful of your favourite dry fruits. Keep frying it until a heavenly smell of ghee mixed with almond wafts.
Now, prepare a mix of jaggery and water. Keep mixing it until a thick and uniform paste is made.

Follow it up by adding thick jaggery paste to the suji base. Keep frying on a low flame until you get uniform consistency.
Add a sprinkling of elaichi powder to enhance the flavour. Serve hot!
