Cooking with coffee

So, ahead of the festive season, here are a few appetizing and easy-to-make coffee recipes that you can try.

Banana Coffee Muffins
Ingredients
1 cup maida
¾ cup sugar
1/3 cup oil
1 banana
¼ cup choco chips
and walnuts
2 tbsp coffee powder
½ cup milk
1 tsp vinegar
½ tsp baking soda
½ tsp vanilla essence

Method
Preheat the oven at 2000C for 10 minutes in bake mode. Mix vinegar with milk and keep aside.

In a bowl mix the maida, powdered sugar, coffee powder and baking soda. Mash bananas using a fork, then measure it, as we want ½ cup of mashed bananas.

Add the mashed bananas, vanilla essence and oil to the milk and vinegar mixture, and mix it well. Now add nuts and choco chips to the mix. Pour the batter into muffin moulds and bake at 1900C for 20 minutes.

Coffee Brownie
Ingredients
140 gm dark chocolate, chopped
¼ cup butter
¼ cup condensed milk
½ cup strong coffee
½ cup powdered sugar
¾ cup flour
5 tbsp cocoa powder
¼ tsp baking powder

Method
Gently melt the dark chocolate and butter together into a mixture. Once melted completely, keep it aside for a few minutes to cool down.

Preheat oven at 1800C for 10 minutes. To the chocolate-butter mixture add the cocoa powder, condensed milk followed by strong coffee and mix it well. Finally, add the powdered sugar, flour and baking powder. Mix it really well by using the fold technique.

Pour this into the cake tin covered with parchment paper. Sprinkle some walnuts on top and bake for 25-30 minutes in 1800C. Best served warm, with vanilla ice cream.

Coffee IDLI cakes
Ingredients
1 cup maida
2 tbsp cocoa powder
2 tbsp coffee powder
½ cup condensed milk
½ cup milk
2 tbsp oil
2 tbsp melted butter
¼ cup powdered sugar
1 tsp vinegar
1 tsp baking powder
½ tsp baking soda
1 tsp vanilla powder
Melted chocolate,
nutella, nuts and
confetti — as required

Method
Mix the milk, condensed milk, vinegar, oil and butter in a bowl and keep aside. Now sift together maida, cocoa powder, powdered sugar, coffee powder, baking powder, baking soda and vanilla powder.

Heat the idli steamer and grease the idli plates with oil. Pour the milk mixture in the flour, and whisk the ingredients together, spoon the batter into 16 idli moulds.

Steam the idlis for 15-18 minutes on medium flame, then let cool and scoop out.

Decorate with melted chocolate, nuts and serve with warm nutella ganache.

Nutella Ganache Recipe:
Simmer 100 ml cream and pour in 100 gm dark chocolate and 3 tbsp of nutella. Mix together, also add in some chopped hazelnuts and serve warm.

Coffee Cashew Cookies
Ingredients
115 gm margarine
100 gm powdered sugar
1 tsp vanilla essence
45 ml milk
½ cup cashews
1¼ cup flour
1 tbsp cocoa powder
1 tbsp instant coffee powder
½ tsp baking powder

Method
Chop half of the cashews and grind the other half. In a mixing bowl, add margarine and sugar. Beat till creamy, and add the vanilla essence, two tbsp milk, ground cashews. Now sift the flour, cocoa, baking powder, coffee in the mixture. Mix and combine, and make a soft dough. Add more milk if required. Wrap in cling warp and refrigerate for 30 minutes.

Preheat oven at 1600C for 10 minutes. Roll dough into ½ inch thickness. Using a cookie cutter, cut the cookies.

Decorate with chopped cashew and place in baking tray.

Bake at 1600C for 20 minutes. Best served next day
