Sautéed vegetables with an egg wrap
Ingredients
- Any choice of vegetables
- Carrot, a big one cut long l Broccoli small l Zucchini - half l Babycorn a few sliced vertically
- Bell pepper one, cut into squares
- For sauté:
- Olive oil 3 to 4 tbsp
- Garlic 3 cloves finely chopped
- Oregano
- Salt
- For egg wrap l 3 eggs
Method
Sauté vegetables in olive oil on a pan while the stove is on simmer. Once the oil is heated, add garlic and fry till it turns light golden brown, the vegetables should change colour, add salt and oregano as per taste. For the egg wrap, beat three eggs and pour the mixture onto a pan and make an omelette. Add salt as per your taste. Once it’s ready, open it up and put in the vegetables on the omlette and wrap it. It makes a good healthy and filling breakfast.
