Kavitha Pai of Out of the Boxx shares her favourite macaroon recipe.

Ingredients:

100 gm egg whites
50 gm powdered sugar
110 gm almond powder
200 gm icing sugar
Vanilla bean powder
Gel food colouring

Method:

Mix almond powder and icing sugar and run in a food processor for a few seconds. Add vanilla bean powder, sift and keep aside.
Beat egg whites with the powdered sugar till soft peaks are formed.
Add food colour and beat till its properly mixed.
Fold in the almond and icing sugar mixture, till you get a lava like consistency.
Put batter in a piping bag and pipe out uniform circles on a cookie sheet line with parchment paper.
Let the piped macaroons rest for an hour.
Bake at 1400 C for 20 minutes.
Let the macaroons cool completely before removing.
Pipe some chocolate ganache or butter cream onto half the macaroons, and sandwich with the remaining half.
