Bollywood’s favourite Parsi chefs, Tehmtan and Shernaz Dumasia, bring their signature flavours to Hyderabad with the Parsi Culinary Chapter at Sheraton. Known for their iconic Dhansak and deep-rooted culinary legacy, the duo presents a rare opportunity to savour authentic Parsi cuisine. DC spoke to them about their cooking philosophy, must-try dishes, and what makes this pop-up unmissable.

Top 3 dishes guests must try during Parsi New Year celebrations?
Three things — Patra ni Machhi, which is our signature; Dhansak, which is known as the best in Bombay, and our Salli Chicken. These three are absolute must-haves.
Any special recipe served only during Parsi New Year?
There’s no specific New Year-only dish. But in Mumbai, we serve a full, traditional meal to mark the celebration. It’s a proper spread.

What signature cooking techniques give your dishes a unique twist?
We make sure the same masalas and spices are used everywhere we go. That’s what gives the food its signature sweet, tangy, and spicy taste. The flavours hit you one after another — sweet at first, tangy on the tongue, and spicy at the end.
What’s the story behind your famous Dhansak?
It’s all about the taste experience — sweet when it hits your mouth, then tangy, and finally spicy when you swallow. That flavour layering makes our Dhansak special. At Ripon Club in Mumbai, it’s a staple every Wednesday, and even food critic Kunal Vijaykar said ours was the best of the three he tasted.

Name a few authentic Parsi dishes that guests may not know.
There’s Doodh ma Cauliflower — it looks simple but surprises people when they taste it. And Lagan-nu-Stew — a rich, spicy tomato-based stew with mixed vegetables. Both are traditional and not commonly served outside homes.

How has Parsi cuisine evolved over time?
There are very few places where you get truly authentic Parsi food today. So whenever we host something, people look forward to it. It’s not just food, it’s our heritage. Parsis have always contributed to India — in service, culture, and food.
How does Parsi cuisine contribute to India’s cultural richness?
Just like Parsis have left their mark in different fields, our food has also become part of India’s rich culinary culture. Even today, many Bollywood stars call us when they want real, home-style Parsi food.
What’s on the menu for the Sheraton pop-up?
At Sheraton, we are doing a rotating menu — something new every day. From fish to chicken, Pulao Dal to Custard — it’s a complete family-style meal. We’ve brought everything from Mumbai to make sure the taste remains true.
