In an exclusive conversation with Deccan Chronicle, Arvind Joshi, Executive Chef at Swastik Wellbeing, discusses wellness cuisine and the importance of eating right. Chef Joshi, who has crafted menus based on the concept of Ayurveda and naturopathy, shared his insights on creating a cuisine that is not only healthy but also delicious.

Guests can indulge in a delectable five-course meal, carefully crafted to provide a perfect balance of protein, carbohydrates, and fiber. Their diverse menu features a range of Indian and international cuisine options, allowing guests to select dishes that cater to their unique tastes and preferences.

At Swastik Wellbeing, the focus is on pure food, minimally altered and minimally processed. The menu is designed to cater to everyone, regardless of their dietary preferences or restrictions. “We want people to feel that they can have healthy food without compromising on taste,” Chef Joshi explains. The cuisine at Swastik Wellbeing is deeply rooted in Ayurvedic principles.

Chef Joshi emphasised the importance of using high-quality ingredients, sourced directly from farmers. “We don't depend on the market,” he said. “We work directly with farmers to ensure that our ingredients are fresh and organic.”

One of the unique aspects of Swastik Wellbeing's cuisine is its focus on grain-free diets. Chef Joshi explained that grains can cause inflammation in the body, and that a grain-free diet can be beneficial for overall health. “We offer a range of grain-free options, including chapatis made from cassava flour,” he said.

Chef Joshi also stressed on the importance of portion control and mindful eating. “We believe that people should not feel 100% full after a meal,” he says, adding, “There should be some space left for craving another bite.”

At Swastik Wellbeing, the chefs undergo rigorous training to ensure that they understand the principles of wellness cuisine. “Training is an ongoing process,” says Chef Joshi. “We conduct trials and experiments regularly to ensure that our dishes are not only delicious but also healthy.”

For guests who want to continue their wellness journey at home, Swastik Wellbeing offers master classes and cooking sessions. Chef Joshi shares his expertise and provides guests with simple and effective recipes that they can try at home.

The key to Swastik Wellbeing’s success lies in its commitment to using high-quality ingredients and creating dishes that are not only healthy but also delicious. With its focus on wellness cuisine, Swastik Wellbeing is pioneering a new paradigm in healthy eating.
