Kashmiri Pandit cuisine is distinguished by its refined simplicity- a menu rich in nuance, where each dish is decadently layered and slow-cooked to perfection. Poshmaal features authentic offerings such as Chaaman Qaliya, Saffron Rice, Tchoot Wangun, Palak Nadir, and the region’s iconic Kahwa, a warm, spiced green tea infused with saffron and almonds. These dishes, alongside a selection of chutneys, dals, and traditional accompaniments, present a rare glimpse into the wholesome and balanced palate of Kashmiri Pandit cooking.

Leading this celebration is Chef Rahul Wali with over 25 years of global culinary experience. His passion lies in preserving the fading traditions of his community’s cuisine, sharing forgotten flavours through intimate dining experiences across India and abroad.
