Two recipes that are not just good for your health but are tasty too. A perfect way to start the new year.

Winter is a good time to indulge in warming stews or simple smoothies. So we bring you two recipes shared by?Sridevi Jasti from Vibrant Living Foods.

Black-Eyed Pea Stew

Ingredients:

  • 2 cups black eyed peas
  • 2 onions, chopped
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 tsp cumin powder
  • 2 potatoes, diced
  • 2 carrots, diced
  • 1 cup mushrooms, chopped
  • 4 tomatoes, chopped
  • 1 avocado, sliced (optional)
  • Olive oil
  • A bunch of coriander leaves
  • Salt and pepper to taste

Method:

Soak the black-eyed peas overnight. Rinse and cook till fairly soft. Reserve the cooking liquid. In a pan, heat ½ cup water and add all the ingredients except the peas, coriander leaves and avocado. Cook till the vegetables are al dente, add the cooked beans. Cook till the beans are soft, ensuring that the vegetables don’t get mushy. Drizzle with olive oil and garnish with coriander leaves and avocado slices, if using. This stew is a meal on its own or can be accompanied with a salad or a grain side.

Smoothie with Coconut Milk

Ingredients:

  • ½ coconut, broken into small pieces
  • 2 cups of water
  • 1 ripe banana
  • 1 cup papaya
  • 6 soaked dates with the soaking water
  • ½ vanilla bean, scraped

?Method:

Blend the coconut pieces with the water in a blender; strain through a nut milk bag or a muslin cloth. Blend the extracted coconut milk with the remaining ingredients. Pour and serve.
