That’s some exam!

Students of Institute of Hotel Management talk about what it takes to give a cooking exam.

When you think of an exam, you imagine students spending hours on the table with books all around. But for the students of IHM it’s a different scene. You will see them in the kitchen, whipping up new dishes or putting together a new decor for a restaurant.

The students of IHM had their practical exams last week and it was a lot of fun. From designing dishes with the colour theme orange to representing the New Orleans Mardi Gras right here in Hyderabad to designing a menu for a Bollywood Retro theme to managing a restaurant, it was almost as if the students were in the finale episode of Masterchef.
And while they were having fun, they were also being assessed.

Puneet Razdan, faculty member at IHM says, “We evaluate their team work most importantly because running a restaurant is team work. We also look for organisational skills, time management and the skill each individual brings to the table.”

The students too had this in mind as they say, “We realised the importance of team work so we worked accordingly in groups. We disagreed on some things but we managed to work together and always kept in touch.”

Aishwarya Ananya, a student says, “Through this exam, we got a chance to talk to and know our batch mates. We laughed, talked, shared knowledge about décor, food and ingredients. We sourced our materials from local markets and it was very pocket friendly.”

Talking about how the theme orange came about, Ankit Pant, a student says, “The Orange festival in Poland served as the inspiration for the group’s endeavors.” They also had a Bollywood retro theme. “Our team was dressed up like characters from old movies to welcome our guests. Sholay ki Kebab, Dharmendar di Lassi, Nargisi Kofte formed our team’s dishes while we designed our menu card to look like a retro poster,” said Manish Verma.

Meanwhile, another student Onkar Joshi says, “Mardi Gras means ‘Fat Tuesday’ and it’s a festival in New Orleans that is celebrated just before Christmas. So we created a carnival set up for the restaurant and our dishes included Mardi Gras Cake and cocktails.”
