Discovering the grapefruit

This week we bring you recipes that are based on the fruit
Broiled grapefruit

Ingredients
2 grapefruits
150 gm sugar
½ tbsp cinnamon
Method
Preheat a broiler. Cut each grapefruit in half crosswise. Place on a baking tray. Mix sugar and cinnamon. Sprinkle the mix evenly over all four halves. Place under the broiler, about four inches from the heat source and broil until sugar is uniformly brown. This will take approximately 2-4 minutes. Serve immediately.
Grapefruit, salmon and avocado salad
Ingredients
1 grapefruit, peeled
2 salmon filets, 220 gm each
Coarse sea salt
Freshly ground pepper
2 spring onions
1 ripe avocado
2 handfuls of lettuce mix
1 handful of cress mix
2 tbsp fresh lemon juice
5 tbsp olive oil
Method
Preheat the oven to 200ºC. Peel the avocado and slice it, cut grapefruit into segments. Season skinless salmon filet with salt and pepper. Place on a baking dish with 1 tablespoon olive oil and bake approximately for 10-12 minutes. Divide into four portions. Top each with avocado and grapefruit segments, lettuce mix and cress.
Whisk lemon juice and olive oil, season with salt and pepper. Drizzle over salad, garnish with finely chopped spring onion.

Ingredients
1 tbsp grape fruit juice
Segments of a quarter grapefruit
4 cups of puffed rice
4-5 litres of water
For tempering
1½ tbsp oil
½ tsp mustard seeds
(optional)
½ tsp cumin seeds
1½ tsp urad dal, chana dal
1 tbsp peanuts
1 sprig curry leaves
3 slit green
chillies
2 dry red
chillies
1 onion large, finely chopped
¼ turmeric powder
Salt to taste
Fresh coriander for garnishing
Grapefruit refresher
Ingredients
1 whole grape fruit, cut into rough pieces
15 gm brown sugar
120 gm water
120 ml ice cubes
Method
Blend together all of the above ingredients in a blender. Strain and serve immediately.
