This Maddur vada is crying out for onions

Bengaluru: Sold in their thousands in trains on Bengaluru-Mysuru section daily, the Maddur Vada is the travellers' fave snack. But this week, the savoury fritters, while being wolfed down by all, didn't taste quite right.
Vendors jumped in as they always did into the Bengaluru bound Tipu Express that leaves Mysuru at 11:15 am to the cacophonous calls of 'Maddur Vada' piled high in steel containers, throwing in the added caveat that if it wasn't hot enough to burn your hands you could return it!
Headed through Maddur, the lush fields from which the eponymous vada gets its name, one traveller accosted long time vendor Mr Prakash. And the truth tumbled out. These weren't the real thing at all! They weren't made from onions, but from the unlikeliest of vegetables - cabbages!
With the cost of onions shooting up to Rs 50 to Rs 65 per kg and cabbages costing Rs 10 to Rs 15 kg, there was no contest. “Everything’s gone up - rice flour, edible oil, maida, rava and jeera. Vadas cost Rs 10 per piece. If we continue to make vadas with onions, we'll go broke.”
