Now, jackfruit cake to tickle your palate

Introduced by Palakkad-based PSSP under brand name ‘Jaxo’

KOZHIKODE: A lot of innovation has been going on in extracting new value added products of jackfruit. The latest addition is chapathi and cake. Jackfruit seed cake has been introduced in the state by Palakkad-based Palakkad Social Service Society (PSSP) under the brand name ‘Jaxo’.

“The cake has 40 per cent jackseed flour (JSF), 20 per cent unripe jack carpel flour and the rest jackfruit pieces, eggs and sugar. No maida or wheat is used,” said an officebearer of PSSP. He added that they were getting advance orders for weddings and parties now. PSSP’s jack wondernut cake, packed in attractive boxes, had drawn Chennai Jack Festival’s attention a few months ago and flew off the shelver, so popular it became.

Now PSSP has entered into a contract with a local bakery for research and development on more baking possibilities using JSF, jackfruit seed carpel flour etc. Being gluten-free, the cake is expected to have more acceptability among health conscious Keralites.

The private company, Kannur based Deltas Food Products Ltd, has launched jackseed chapathi a few days ago. “Currently we are producing 1500 chapathis. We are getting queries from different parts of Kerala and outside,” said Ismayil K.T, the proprietor of the firm.

The chapathi is being sold in a half-baked form. Horticulture mission Additional Director Sheela P said it was a welcome trend that jackseed flour could replace unhealthy maida in bakery products.
