Jack (of all) fruits
You either like it or you don’t, there is no middle path with jackfruit. But those who like it swear by it. This week, we bring you recipes that use the multipurpose fruit.

Roasted jackfruit seeds

Ingredients
- 4 cups of cleaned and prepped jackfruit seeds, sliced long
- ½ tsp of turmeric powder
- 1-2 tbsp of oil (preferably coconut oil)
- 4-5 crushed red chillies (or 1 tsp red chilli powder)
- 6 cloves of garlic, crushed
- ½ tsp of freshly cracked black pepper
- 1 tsp of salt (adjust to taste)
Method: Prep the jackfruit seeds for cooking. Heat oil and add the sliced jackfruit seeds. Keeping the fire on medium-low, stir-fry the seeds until they start to sweat a bit. Add turmeric powder and salt. Keep stir-frying until the seeds turn soft, yet hold their shape. This will take about 10-15 minutes depending on the freshness of the seeds. Once they are cooked, add the crushed garlic and red chillies. Continue to stir and roast until the oil does its magic and the seeds start to get brown. This will take about 10-12 minutes. You can continue to roast until it’s golden brown or stop when it’s partially browned. Switch off the flame and add the freshly cracked pepper. Mix well.
Note: How to prepare jackfruit seeds for roasting
Remove the outer white layer and soak the seeds in warm water for 30 minutes. Scrape off the brown thinner skin using a paring knife. It’s tough to get it off so a few bits here and there is okay. Wash the peeled seeds and cut each into four-five pieces length-wise.

Jackfruit chips

Ingredients
- 500 gm jackfruit, deseeded and finely sliced
- Salt to taste
- Chilli powder to taste (optional)
- A pinch of turmeric
- Oil to deep fry
Method: Slice the jackfruit in thin slices and set aside. Heat the oil in a a kadhai. You can either mix the sliced jackfruit with salt, chilli and turmeric and set it aside for a few minutes prior to deep frying it or you can deep fry the jackfruit and just when they turn golden brown add the salt. Take it off the stove and strain the excess oil. Store in an airtight container.

Jackfruit creme brulee

Ingredients
- 100 gm fresh jackfruit paste
- 400 gm fresh cream
- 85 gm sugar
- 8 egg yolks
- 3 ml vanilla flavour
Method: Mix the egg yolk and sugar. Add warm cream to the yolk and sugar mixture. Slowly add jackfruit puree and vanilla flavour in the mixture. Pour the mixture in a bowl and bake it in a pre-heated oven at 160oC for 20 to 22 minutes in a water bath, till the sides are firm and the centre is soft. Remove from the oven and let it reach room temperature and refrigerate. Before serving, sprinkle castor sugar on top and place under a salamander (or a grill) to caramelise the sugar.
