CREAMY FENUGREEK CHICKEN

Ingredients

  • 600 gms boneless chicken( cut into thin long pieces)
  • Marinate ingredients
  • 1 cup Yoghurt
  • 2 tbsp kasoori methi (dried fenugreek leaves)
  • 1 tsp white pepper powder
  • Salt

Paste ingredients

  • 1 tbsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp garam masala
  • 4 green chillies
  • 2 onions
  • Oil

Method

  1. Marinate chicken with yoghurt , pepper powder, kasoori methi and salt.
  2. Grind the paste ingredients.
  3. Heat the oil in a pan and fry the onion paste until it changes colour.
  4. Add the marinated chicken, Fry for 3 to 4 minutes.add a little water.
  5. Cover, lower the heat and cook until the chicken is tender.
  6. Add the cream and cook for another 2 minutes.
  7. Garnish with coriander leaves and serve with paratha.

CRISPY SESAME LAMB ON LETTUCE

Ingredients

  • 500 gms boneless lamb (cut into thin strips)
  • 1 tsp black pepper powder
  • 1 tsp salt
  • 1 tsp tabasco chilly sauce
  • 1 tbsp oil
  • 100 gms flour ( mix 50 gms maida, 50 gms cornflour, 1/2 tsp pepper powder, salt)
  • Oil for frying

Method

  1. Mix salt, pepper, chilly sauce, oil with the lamb marinate for 2 hr.
  2. Add the flour mixture to the marinated lamb and mix well.
  3. Heat oil in a wok or kadai and deep fry the lamb strips, keep aside.

Sauce

  • 1 tsp garlic ( finely chopped)
  • 1 tsp ginger ( grated)
  • 2 star anise
  • 2 tbsp red chilly paste
  • 5 tbsp soya sauce
  • 2 tbsp tomato sauce
  • 1 tbsp vinegar
  • 2 tbsp light brown sugar
  • Salt
  • A little water

Method
1- Boil all the above ingredients, till it reaches a sauce consistency.

Other ingredients

  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 2 tbsp roasted sesame seeds
  • 1 bunch lettuce leaves
  • Oil

Method

  1. Heat oil in a pan, add the peppers and fry for a minute.
  2. Add fried lamb strips, add the prepared sauce give it a good mix.
  3. Sprinkle the sesame seeds.
  4. Roll this mixture into lettuce leaves and serve.
