Speeding up the ageing process

Davis is continuing to work on the technique at his Lost Spirits Distillery in California

The problem with darker spirits like whiskey, brandy and rum is that making them is a fairly time-intensive process, especially because it is the ageing that makes such a difference to their taste.

Well, according to a report published in Wired, one man may well have found a way to circumvent the ageing process. Bryan Davis, says the report, has found a way to produce spirits such that they taste as though they have been aged for 20 years — in just six days.

How does he do it? Apparently, he takes new distillate and runs it through a chemical reactor he’s created. The machine brings out the same chemical compounds in the new distillate that give spirits aged over a long period of time their character.

While it remains to be seen just how the “spirit world” will respond to Davis’ invention will change the “spirit world”, should his process be widely accepted, it is certain to usher in a sea change. In the meantime, Davis is continuing to work on the technique at his Lost Spirits Distillery in California.
