Celeb Recipe: Biscuits for your tea time

Can’t find the right tea time bite? There’s nothing that combines crispiness and a measured dose of sugar like a well-made, fresh coconut biscuit. What’s more? It’s so easy to whip up with the ingredients lying around at home.
Coconut biscuits
Ingredients
90 gm desiccated coconut
150 gm self-raising flour
220 gm sugar
1 egg
125 gm butter, melted
Method
Preheat the oven to 180ºC. Mix the dry ingredients together. Stir in the egg, then the butter. Work everything together with your fingers.
Form walnut-sized nuggets with your hands. (They’ll feel a little greasy, but resist the temptation to add more flour.) Arrange on an ungreased baking tray, allowing lots of room for them to spread. Bake for 10 minutes.
Allow to sit on the tray for a couple of minutes, then transfer to a wire rack to cool. Makes 30 small biscuits
