Pan-Asian flavours get their share of street food and chef Janti Dugal decodes the taste
Hyderabad: Much of Oriental cuisine is inspired by local street hawkers’ recipes and flavours. Some of the dishes are our rendition of various trademark cuisines. As a team, we travel across various countries in Asia to find inspiration among ingredients available locally. These recipes are classic but turn corners on taste and flavour.
These renditions of the various dishes available on the streets of South Asia include the Som Tam which is made by housewives throughout Thai villages, a superb blend of cold, wholesome raw papaya mixed with a tangy dressing of chilli and palm sugar. Indonesian banana leafed fish marinated with a secret combination of tomato, garlic and chillies or the hot and sour with 22 ingredients showcases the simple complexities of regional Schezuan cuisine an extremely complex dish, the balance of various ingredients is crucial.
Hot & sour soup
Ingredients
Chicken boneless (shredded) 75 gm
Chicken broth powder 5 gm
Egg drop 20 gm
Vinegar 5 gm
Light soy sauce 15 gm
White pepper 3 gm
Green chilli sauce 5 gm
Chilli paste 2 gm
Dark soy 5 gm
Corn flour 10 gm
Sesame oil 5 gm
Chinese wine 5 gm
Sugar 5 gm
L & P sauce 5 gm
Tofu 10 gm
Bamboo shoot 10 gm
Chopped ginger 3 gm
Carrot 10 gm
Cabbage 10 gm
Water/stock 225 gm
Chopped garlic 5 gm
Spring onion 20 gm
Coriander 5 gm
Black mushroom 10 gm
Method
Boil stock. Add all ingredients except egg drop, corn starch. Thicken with cornflour. Finish with a swirl of beaten egg (egg drop). Boil and serve.
Java grilled fish in red hot sambal salsa
Ingredients
Oil 30 ml
Finely chopped onion 20 gm
Finely chopped garlic 15 gm
Finely chopped fresh red chilli 10 gm
Finely chopped tomato 60 gm
Fish sauce 45 ml
White vinegar 5 ml
Sugar 10 gm
Paprika 5 gm
Method
Heat oil in a wok or kadai.
Add onion, garlic and red chilli.
Cook till light brown.
Add tomato and cook for three to four minutes on high heat.
Add other ingredients and mix well.
Adjust seasoning.
Keep aside.
Ingredients for Fish
Sole fillet or red snapper 200 gm
Fish sauce 10 ml
Lime juice 5 ml
Marinate the above.
Assembly of Fish
Coat marinated fish with the Java Sambal.
Wrap in a banana leaf or aluminum foil.
Grill until done (on coal or oven). Serve.
