Let’s talk burgers - 3 delicious hamburger recipes

International Hamburger Day will be observed this week. So, if you too are planning to celebrate the day, we bring you three hamburger recipes with three different meats from the city’s top restaurants, Chef Inam’s Steak House and ITC Kakatiya.
Special cheese stuffed hamburger
Ingredients:
450 gm lean minced beef (you can also use minced chicken or mutton)
½ tsp coarsely
ground pepper
1 tsp Worcestershire sauce
1 tsp mustard sauce
1 tsp finely chopped garlic, 2 slices of cheese
1 tsp finely chopped parsley
½ tsp paprika
Salt to taste (preferably sea salt)
3 tbsp Hickory smoke BBQ sauce (for basting), 50 gm iceberg lettuce
2 tbsp canola oil
Method:
Mix all the ingredients (other than the BBQ sauce, canola oil and lettuce) with the meat and refrigerate for 4 to 5 hours. Portion the mixture into two patties. Fold two slices of cheese and place it between the patties and seal the edges. Place the patty on a hot grill and cook till both sides are cooked well. While cooking, baste the patty with a mixture of the BBQ sauce and canola oil frequently. Once the meat patty is cooked to your choice, tuck it in the burger bun or bread of your choice. You can spread the inside of the bun with BBQ sauce, pepper and top it with iceberg lettuce.
The Crispy Sea bass burger
Ingredients
Linseed Bread:
130 gm refined flour
3 gm yeast
90 gm sugar
10 gm salt
40 ml water
7 gm fat
30 gm linseed flour
Filling:
90 gm sea bass steak
Rocket lettuce
4 slices cucumber
4 slices gherkins
50 gm mustard and mayo
30 gm butter
50 gm panko crumb (flaky crumbs)
1 slice English cheddar
10 gm dill
1 lemon
Procedure:
For bread: Mix the ingredients and let it rest for 20 minutes. Shape into buns and bake at 210 0C for 15 minutes. You can also buy readymade burger buns.
For the filling:
Marinate the fish steak in mustard, dill, lemon juice and salt. Mix the panko crumb and deep fry till the patty gets a golden hue. Stack up the rocket lettuce, cucumber, cheese and gherkins and patty. Finish with mustard mayo to moisten the burger.
The Ramen Burger
Ingredients
80 gm ramen
noodles
(you can use normal burger buns if needed)
1 egg
180 gm lamb mince
Lettuce
3 slices tomato
4 slices cucumber
4 slices gherkins
1 slice English cheddar
50 gm honey mustard
5 gm rose mary
10 gm sorrel leaves
15 gm ketchup
Procedure:
Cook the ramen noodles till done and incorporate an egg into it. Place the noodles on a plate and cool. Once cooled, shape the ramen like a bun using a circular cutter. Sear the ramen on a griddle to give it a darker colour and to make it crispy. Mix the lamb mince with the rosemary and sorrel leaves and fry till it becomes golden brown. Stack up the rocket lettuce, tomato, cucumber, English Cheddar and gherkins. Moisten with ketchup and honey mustard. Served with honey glazed potatoes and guacamole.
