Express Aloo Tikki with Mayonnaise dip

Aloo tikki is what I make when I have unexpected guests and I barely have any time for preparation. My friend’s mom is the best cook I’ve ever confronted. She is the one who taught me that tasty and good food need not be complicated.

Express Aloo Tikki with Mayonnaise dip

Ingredients
For the Dip
3 tbsp mayonnaise
2 tbsp milk
1 tsp oregano (dried)
½ tsp parsley (dried)
2 garlic cloves (crushed)
50 gm (chopped) coriander leaves
Salt
Pepper
1 tsp lemon juice

For the Tikki
2 potatoes (boiled and mashed)
1 small onion (finely chopped)
250 gm bread crumbs
50 gm (chopped) coriander leaves
1 tbsp fennel (roast and ground)
1tsp coriander (roast and ground)
2 green chillies (chopped)
Salt
1 tbsp oil

Dip: Mix all the ingredients and keep it in the refrigerator.
Tikki: Mix all ingredients except bread crumbs. Now mix the bread crumbs till you get a thick, non-sticky consistency. Pat and make 6-7 patties out of it. Make sure the patties are not too thin or else it will break.
Take 1 tsp oil in a non-stick pan. Shallow fry these patties until both sides have a golden brown coating.
Serve hot with the mayonnaise dip.

Tip: The mayonnaise can be substituted with hung yogurt.
